Last year we did a 'cruise' and had different 'ports of call' set up for appetizers.  Some examples are, a Mexican village for chips and salsa......a Caribbean one for fresh fruit, etc. 

We took hula hoops and faced them with blue cello and hung them on the walls for portals.  It looked pretty cool.  On the stage we had a guy build a ships gang plank and let everyone take turns putting on sailors hats for photo ops then we laid the pictures on the exit table and everyone could take a souvenir of their 'voyage'.  We had a great chicken dish for dinner.  For dessert we had fountains.....chocolate, caramel and white chocolate with chunks of angel food cake, fruit, etc.
