Freezer Meal Enrichment Group

We do freezer meals in our ward and we have a very large attendance from people who are older to young mothers. We sign up for 1 or 2 specific meals and pay in advance for the meals and have one person buy everything. We meet at her house and assemble 1-2 meals. It has gotten so big that we even have 2 different 2 hour sessions the same
day. One in the morning and one in the evening. We just show up anytime during that time period.

The cost of each freezer meal is different. They have ranged from $4 dollars to $8 and we always do it for 6 people. Some of us with smaller families separate it into 2 meals. We send around a sign up sheet with the cost of the two freezer meals we are doing that month.  They can sign up for one of them or one of each. Most people do both.  We have like 30 people sign up from older women, single women, and younger women with small children at home. We meet at one sisters house and assemble in order. We have recipes we send home with them if they want to make it again. It is amazing how many things freeze well. We are doing a chicken carbonara this month and something else.  Hopefully I have answered your questions. In my sisters ward they form a group of 8 and they make 8 of the same meal and swap once a month.
 

Chicken broccoli casserole freezes well, I also put stove top stuffing on top prepared.  Pastas work well in the freezer, the only thing you have to be careful about is there are a few ingredients that don't freeze well.  A lot of recipes say you can freeze tortilla but I don't like them because they get soggy, there is probably I trick but I don't know it.  I hope this helps.  Those Glad bakeware/freezer ware are the best to use because you can freeze in them and then cook in the oven.

Honey Baked Pork Chops
 

Ingredients for Cooking Day:

6 boneless pork chops

1/2 cup honey

1/4 cup cider vinegar

1/4 t. ground ginger

1 clove minced garlic

2 Tbsp. soy sauce
 

Directions for Cooking Day:  Place honey, vinegar, ginger, garlic and soy sauce in blender and mix well.  Place uncooked pork chops and honey mixture in a freezer bag and freeze.
 

Directions for Serving Day:   Thaw completely.  Place pork chops and honey mixture in a baking dish.  Bake for 350 degrees for 1 hour or until pork chops are cooked.  Turn pork chops occasionally while baking.

 


Chicken Tetrazzini (Assemble after chicken is cooked)

Store in casserole dish

 

1 8 oz pkg spaghetti
2 to 4 c. cooked diced chicken

1 ¼ c. chopped onion
2 c. grated cheese

2 cans cream of chicken soup                 
1 c. grated Parmesan cheese

3 Tbsp. butter to sauté onions
1 c. sour cream
salt and pepper to taste

 

Cook the spaghetti.  Sauté the onions.  Mix ingredients together and freeze.  Thaw and cook 350 for 40 minutes, then uncover and bake 20 minutes more.
 



Honey Baked Pork Chops
 

Ingredients for Cooking Day:

6 boneless pork chops

Lasagna (assemble after noodles cooked, beef cooked, and spaghetti sauce)

Store in casserole dish

 

1-1/2 pounds lean ground beef

1 onion, chopped

Spaghetti Sauce

12 dry lasagna noodles

2 eggs, beaten

1 pint part-skim ricotta cheese or blended cottage cheese

1/2 cup grated Parmesan cheese

2 tablespoons dried parsley

1 teaspoon salt

1 pound mozzarella cheese, shredded

2 tablespoons grated Parmesan cheese

 

Brown hamburger. Bring a large pot of lightly salted water to a boil. Add lasagna noodles, and cook for 5 to 8 minutes, or until al dente; drain. Lay noodles flat on towels, and blot dry. In a medium bowl, mix together eggs, ricotta, Parmesan cheese, parsley and 1 teaspoon salt. Layer 1/3 of the lasagna noodles in the bottom of a 9x13 inch baking dish. Cover noodles with 1/2 ricotta mixture, 1/2 of the mozzarella cheese and 1/3 of the sauce.  Repeat. Top with remaining noodles and sauce. Sprinkle additional Parmesan

cheese over the top.  Freeze and then bake until heated through, about 1 to 1-1/2 hours.

 



Italian Meatballs with Marinara Sauce
 

1 Lb. Ground Beef ½ Lb. Pork Sausage

2 Large eggs 1 cup Italian breadcrumbs

2 Garlic cloves, minced 3 tsp. Italian seasoning

½ cup Milk ½ cup Parmesan cheese

1 pinch Garlic powder 1 Tbs. Brown sugar

Salt and pepper to taste.
 

Mix all ingredients together and roll into small balls.  Brown meatballs in olive oil (Don’t cook them through.)  Let cool and then freeze.  (Or place in crock pot or baking dish.)
 

Sauce:
 

1 -6 oz. Can tomato paste + 2 cans water
1-12 oz. Can tomato sauce

2 Garlic cloves                 
1/3 cup Minced onion

1 tsp. Salt
¼ tsp. Pepper

3 Tbs. Olive oil
3 tsp. Italian seasoning
 

Cover and bake at 300 degrees for 3 ½ hours.  Or: if frozen put frozen meatballs and sauce in crock pot.  Serve over penne pasta.  Top with mozzarella cheese.

 



Aussie Chicken
 

Sauce:
 

2/3 cup Mayonnaise ½ cup Light corn syrup

1/3 cup Honey 1 Heaping Tbs. Prepared mustard

1 Tbs. Dried onion flakes ½ tsp. Dried parsley flakes
 

Mix above ingredients together for the sauce, and place in separate container or bag.
 

Chicken:

2 Lbs. Chicken (12 tenders)
2 tsp. Seasoning Salt

½ cup mushrooms (optional)
 

Mix above ingredients in a bag.  Close and shake until chicken is coated.
 

Then open the bag and layer 6 slices of bacon over the chicken.
 

Add later:
 

1 cup cheese (do not put in with chicken).  Sprinkle on top after it is cooked or last few minutes of cooking.  Bake chicken and bacon for 20 minutes.  Take it out of the oven, pour sauce over chicken, sprinkle with cheese and bake 4 more minutes or just until

cheese is melted.
